Tandoori chicken recipe

Many people like to eat tandoori chicken when they go to restaurants. 

Even if they want to make it at home, they often get confused about how to make it, so I am putting this recipe here for you, as if it were simple and easy to make.

Tandoori chicken recipe is an Indian dish, but it is a special dish that will leave an unforgettable experience after you try it once.

Although this recipe is made in a skillet, the simple tip we use is that the BBQ flavor, the aroma that comes while cooking, and the good color make us want to eat more.

I have a gluttonous brother-in-law who always says, “Look, brother-in-law, let’s make chicken thighs better and eat them,” and that just makes me sick. Now, if I go to such lengths to make this tandoori chicken, he’ll just make the legs whole. What can we do, brother-in-law? We’ll have to bear it.

It can be made in restaurant style with ingredients available at home. It is very simple and easy, so try it once. You will definitely like it. Now quickly jump into the recipe.

 

Ingredients

Tandoori Chicken:

  • 1 tbsp sweet paprika
  • 1 tbsp garam masala
  • 1 tbsp turmeric powder
  • 1 tbsp brown sugar
  • 1 tsp ground cumin
  • ½ cup (125 g) yoghurt
  • 2 tbsp tomato paste 
  • 1 tbsp freshly minced garlic
  • 1 tbsp freshly minced ginger
  • 1 tbsp lemon juice
  • 1½ tsp sea salt 
  • 800 g skinless chicken thighs (around 5–6)
  • 2 tbsp olive oil

 

Tandoori Chicken Preparation Method

 

Step 1: Prepare the Chicken

  • For this recipe, take 4 full-size chicken leg pieces, remove the skin, and wash them well.
  • Now make deep cuts on all the leg pieces. Squeeze half a lime juice on top, then sprinkle one tablespoon of salt and massage well for 2 minutes. Keep aside for 10 minutes.

Step 2: Make the Marinade

  • Take a bowl and add 3/4 cup of Greek yoghurt, 1 tbsp freshly minced garlic, 1 tbsp freshly minced ginger, 1 tbsp sweet paprika, 1/2 tbsp turmeric powder, 1 tbsp garam masala, 1 tbsp tandoori masala, 1tbsp olive oil. Now mix everything well
  • Now add paste to the chicken & Massage well and keep it in the freezer for at least 1 hour.

Step 3: Now let’s prepare the green Mint chutney.

  • In a mixer jar, add 1/2 cup of washed mint, 1/2 cup of coriander, 1/2 inch ginger, 1 green chilli, 1 tsp ground cumin, salt to taste, and grind it finely. That’s it. Our Green chutney is ready!

Step 4: Cooking the Chicken:

  • Take out the chicken that you have just removed from the freezer and roast the chicken. 
  • Place a thick and wide pan on the stove and place the chicken in the pan without adding any oil. 
  • Add the remaining spices. Keep it on medium flame and fry the chicken pieces for 8-10 minutes, turning them around without moving them.
  • If you do not cover the pan at this stage, the spices will get stuck, and the oil will be released & the chicken will become dry.
  • Now add 1 tbsp butter and mix it. Now cover the pan and remove the lid every 2 minutes, and roast the chicken by turning it.

Step 4: For tandoori smoked flavor (BBQ Aroma) :

  • Place the well-cooked chicken pieces on the edges of the pan, place a steel griddle in the middle, put 4 well-burnt coals on the stove, add 1/2 tablespoon of butter to it, cover it so that the smoke does not come out, then the smoke sticks to the pieces well. 
  • Remember, this process takes about 5 minutes.

Step 5: Final touch for our Favorite Tandoori Chicken:

  • Turn on the stove and roast each chicken piece on the burner for 5-10 seconds on high flame, and the texture of the piece will be perfect.

Step 6: Serve with Green Chutney:

  • Transfer our tandoori to a white plate and garnish with fresh cilantro, spring onions, and lemon wedges. Serve with the Mint chutney that we have prepared earlier.

Tips for the best chicken tandoori

  • For a BBQ-style smoky flavour, place four hot coals in a small steel bowl, place it in the middle of the well-cooked pieces in the pan, cover tightly, and cook for 5 minutes.
  • To make the chicken tender, marinate it and keep it aside for at least 2 hours.
